REDMARK - Cabernet Sauvignon Syrah - California
THE WINE
Redmark captures whisky’s unmistakable mark, leaving lasting impression on this bold Cabernet Sauvignon Syrah blend. For this limited release, an exciting first for VineCo the juice was pre-oaked in-house, steeped for six months with local Niagara whisky oak chips*. Steeping the juice with whisky oak chips adds depth and structure, enhancing tannins while rounding the palate and layering in notes of sweet spice and brown sugar. The result is a confident, full-bodied wine where Cabernet’s dark blackcurrant and plum meet Syrah’s ripe wildberry and savoury spice. The blend finishes with hints of mocha, vanilla, and a gentle wisp of smoky toasted oak- anunmistakable mark that lingers long after the last sip.
THE FOOD
Pairs beautifully with grilled ribeye, braised short ribs, or lamb chops, where the wine’s structure complements rich, savoury flavours. Its depth also enhances dishes like mushroom risotto or aged cheeses such as cheddar and gouda. For a finishing touch, try alongside dark chocolate or cocoa-based dishes to highlight its layered complexity.

INFUSION - Cabernet Zinfandel Syrah - Lodi, California
THE WINE AND REGION
Cab Syrah (Shiraz) blends are common, but the addition of Zinfandel is a California creation. These popular varietals thrive in Lodi, which tends to grow softer, more fruit-forward reds. Cab brings its signature blackcurrant flavours, ample acid and tannin. Zinfandel adds jammy berries, with Syrah contributing plum and pepper. Together they make a bold wine with abundant berry flavours and rich tannin, making it an ideal base for something a little extra.
STEEPED IN WHISKEY OAK
Juice for this limited release was pre-oaked in-house, steeping for several months with Niagara whisky oak chips. During this 6-month steep, the juice absorbs flavours and tannin from the whisky oak, adding roundness to the body, elevating tannin, and infusing it with nuanced sweet spice, brown sugar and vanilla character.
