THE WINE
Union Red is a flavourful blend of Cabernet Sauvignon, Merlot and Cabernet Franc. The Cabernet Sauvignon has aromas of cassis and savoury spice, along with flavours of black currant on the palate and a juicy dark berry finish. The Merlot and Cabernet Franc unify this blend and bring flavours of black cherry, tobacco and subtle hints of pepper.
THE REGION
A historic region that rests along the Mediterranean coast of France, bordered to the west by the Rhone River and Cote d’Azur on the east. Provence is blessed with a perfect climate for growing grapes; lots of sunshine, minimal rain, and warm days and cool nights. The region is famous for the “Mistral” winds which come off the Mediterranean to moderate the temperature and keep the vineyards dry and free of pests.
THE FOOD
Drink alongside black pepper steak, braised leg of lamb or prime rib. Alternatively try a savoury lentil or mushroom stew, or roasted potatoes and root vegetables. Cheddar, aged gouda or other hard cheeses also make a great pairing for Union Red.

THE WINE
A classic French blend of Sauvignon Blanc and Sémillon create the crisp and medium body Union White. Expect aromas and flavours of citrus, gooseberry, and pear with faint herbaceous and mineral notes. Union White has bright acidity, bold aromatics and flavours with a clean finish.
THE REGION
Provence is the oldest wine producing region in France with over 2600 years of grape growing experience. The region borders Italy and the Mediterranean Sea and is known for its diverse landscapes from the Southern Alps to the rolling vineyards and olive groves. Wild rosemary, juniper, thyme and lavender grow all over the region which create character in the wines. The region is graced with a Mediterranean climate of warm days and cool nights and a diverse mix of terroir.
THE FOOD
Sip this wine alongside shellfish such as oysters and mussels, or white fish like cod or halibut (with butter, caper and lemon sauces). A fresh arugula salad with a lemon parmesan dressing, goat cheese appetizers, tabbouleh, or asparagus risotto would also pair well. Key food flavours that enhance this wine are basil, parsley and citrus.

THE WINE
Dos Grenache is a unique full body blend of Grenache from Spain and Australia. In Spain they call the grape Garnacha and it brings jammy aromas and flavours of strawberry, blackberry and dark cherry. The Australian Grenache has very similar characteristics but adds extra richness with notes of candied juicy ripe fruit. Dos Grenache is lush with intense berry flavours, along with hints of vanilla, cinnamon, dried herbs and spice.
THE REGION
Chiva is located in Valencia which is the centre of Spain’s sunny east coast. The Riverland region in southern Australia is the largest wine growing region that is located east of the Barossa Valley and extends along the Murray River. Chiva experiences very hot days that are relieved with a
sea breeze from the Mediterranean. Riverland with a continental climate, sees hot dry and sunny days and relies on the Murray River to irrigate the vines ensuring fully ripe and flavourful grapes.
THE FOOD
A great wine to match with any grilled, stewed or braised meats especially rosemary rack of lamb. The spice in Grenache also pairs well with hearty dishes that are herb-heavy and savoury such as herb roasted vegetables or ratatouille. For cheese try Manchego or a mild blue.

THE WINE
A spicy blend of Carménère and Petit Verdot that is balanced, and fruit driven. Look for black cherry, blackberry and fig with earthy undertones, notes of chocolate, tobacco, tea leaves and savoury spice from the Carménère. The Petit Verdot adds another layer of ripe black fruits, plum and spice on both the nose and palate.
THE REGION
The Curico Valley is in central Chile, south of the capital, Santiago. It’s a warm valley between the Andes and Coastal mountains. The valley has a Mediterranean climate that experiences hot days and humid cool nights ideal for growing aromatic and flavourful grapes. The soils are composed of limestone and volcanic rock which both contribute to the bold flavours in this wine.
THE FOOD
Beef brisket, filet mignon, and BBQ lamb chops are just a few of the dishes to pair with this Chilean blend. Stuffed peppers with chorizo and rice, and legume-based dishes are also an excellent match. Try with hard cheeses such as aged cheddar or pair it with 70% dark chocolate.

THE WINE
This blend of Merlot and Cabernet Franc offers a balanced soft rustic profile. Merlot stands as the fruit-forward backbone of the wine, while the aromatic Cabernet Franc rounds out the blend with soft spices and herbal notes. On the nose and palate, this wine offers plum, red and black berries and dark cherry fruit notes, with underlying woody smoke, herbal spice and soft tannins.
THE REGION
Known for its Bordeaux style wines, Paso Robles dedicates over half their vines to Bordeaux varieties including Merlot and Cabernet Franc. Spanning over 614,000 acres it is California’s largest AVA. Paso Robles is unique as it holds three key factors to ripening grapes with refreshing acidity; diverse soil found in varying elevations, hot days and cooler nights, and varying rainfall levels combine to create the perfect environment for brilliantly defined wines.
THE FOOD

THE WINE
The perfect trio of Chardonnay, Riesling and Pinot Gris, create this off-dry, medium bodied white wine. Fresh aromas of orchard fruit and delicate honey rise from the glass, while the palate sings with lively pineapple, lemon and stone fruit flavours combined with hints of apple, pear and honey. The zesty acidity in this wine balances the slight sweetness perfectly.
THE REGION
Just east of San Francisco Bay rests Lodi California. Basking in a Mediterranean climate, Chardonnay grapes grow plump during the warm days and cool nights, maintaining refreshing acidity. Pinot Gris from Oregon’s Willamette Valley are protected from over-ripening by the cool nights while the valley offers mild, warm and sunny days for the grapes. The most northern of the three, Yakima Valley in Washington, is home to the oldest agricultural region in the state. Here, Riesling, one of the state’s most widely planted varieties, benefits from limited rainfall in the growing season creating crisp, fruit forward wines.
THE FOOD
Pair this blend with lighter meats and fresh vegetables, perhaps linguini and grilled vegetables with shrimp in a light cream sauce. Sushi and lightly spiced Asian dishes and cheeses such as Brie, Camembert, and Gruyère complement this wine beautifully.

THE WINE
A marriage of Argentina and Spain brings you a full-bodied wine rich in aromas of dark berries with nuances of licorice and chocolate. Balanced and full with soft tannins, a palate of ripe black and blue berries are complemented with spice of black and white pepper, creating a finish that is long and pleasing.
THE REGION
Mendoza, Argentina and Valencia, Spain share similar growing conditions; hot dry summer days that create the perfect environment for full ripening with cooler nights to provide a much needed break from the daytime heat. Both located at higher elevations, Mendoza is a high flat dessert like plain (2000-3600 ft.), and Valencia is a more mountainous region (400 - 3600 ft.). Both regions rely on man controlled irrigation because of the extreme dry climate and threat of drought. Mendoza utilizes the irrigation channels from the Andes Mountains snowmelt and Valencia’s vines are irrigated through drip irrigation systems.
THE FOOD
This bold blend deserves a bold food pairing. Try a barbeque burger topped with smoky bacon and blue cheese. Other food ideas include beef empanadas, mushroom and bean stews and beef brisket.

THE WINE
Super Tuscan, a term made popular in the 1980’s, is used to describe wines made in Chianti that did not follow the strict DOCG rules using varietals non-indigenous to the region. A blend of Sangiovese, Merlot and Cabernet Sauvignon, this full bodied Super Tuscan exhibits aromatic notes of oak, vanilla, leather and spice while the palate punches with bold black cherry and raspberry flavours. Firm but not aggressive tannins and a long lingering finish makes this wine a true show stopper.
THE REGION
Tuscany Italy, where foodies and wine lovers bask in the beauty and bounty of the land. The growing season is by definition Mediterranean. Warm sunny days and cool nights benefit the grapes, contributing to the glowing reputation of Tuscany’s wines. While the land has challenged soil conditions, this benefits the region resulting in lower yields and higher quality wines loved by critics worldwide.
THE FOOD
Pour this wine alongside signature Tuscan fare. Try a charcuterie board with prosciutto, salami, aged Parmigiano Reggiano and Pecorino cheeses with crusty Italian bread, or a traditional pasta dish with rich tomato herbed meat sauce. If looking for vegetarian options, vegetable pasta (mushroom and eggplant) drizzled in olive oil is a surprising match, as the olive oil will cut through the rich tannins and compliment the wine nicely.

THE WINE
Cabernet Sauvignon is the backbone of this wine, providing great structure, body and depth of colour. Merlot provides a silky texture, and Syrah intensifies the rich fruit character. This full-bodied wine has velvety tannins and a rich mouthfeel with flavours of red and black berries, cherry, mocha, vanilla, Chai spice, chocolate and oak.
THE REGION
California’s North Coast consists of some of the most well- known and respected wine growing regions, including Sonoma, Stags Leap in Napa and Lodi, the source of the grapes for this exceptional wine. The climate is quite variable from valley to valley, but is classified as Mediterranean. The growing vines and grapes benefit from the long growing season, hot days and cool nights and wet winters creating high quality wines.
